We usually start at the end of October, and it lasts until mid-November (an average duration of 20-25 days) depending on the gradual maturation of the olives, the olive grove area and the soil and climate conditions at that time. Therefore, we collect the olives in batches as they reach their optimum ripening stage, avoiding delays, so that the olives do not lose health and the oil extracted do not lose quality.
The harvesting begins just before the olives turn their color from green to veraison (pink-purple) This type of collection is known as “early harvest” and it doesn´t mean that it is harvested prematurely, but rather in the early phase of its maturation (it´s also known as “first days of harvest”)
We solely collect olives grown in our olive grove, from the branches, and just fresh and healthy olives, always by specialized staff using modern and efficient harvesting equipment. During the harvesting we follow strict procedures, protocols and guidelines given by our field and mill management body, controlling each batch according to the olives´ ripeness and healthiness, the climate and the best collection hours (not under rain nor high temperatures). We do an exhaustive control of each collected lot, to control traceability.
We combine different olive collection systems, classified according to their complexity and productivity, and applied depending on the area of the olive grove and the ripening of the olives.
Some lots are collected by milking, by hand, which go directly from the tree to the baskets and/or are dropped on a, previously placed on the ground mesh, and then are dumped on the trailers. This is a very slow and very expensive process, but very careful, as it doesn’t damage the fruit or the tree in any way.
There are batches collected by combing, with combs, that are mechanized sticks with a comb or fine rake at the end. But, most of our olives are collected with buggies, which are tractors with a vibrating arm that attaches to the olive-trees branches and trunks and vibrate until the olives fall on a large collecting umbrella, previously extended under the perimeter of the olive tree. This system is of great maneuverability, quality, effectiveness and productivity.
